  • If you dip an onion in scalding hot water before peeling, it won’t cause your eyes to water.
  • Bread will stay fresher longer with a celery stalk placed inside the bread bag.
  • When microwaving baked potatoes, stick 3-4 toothpicks into one of the long sides of the potato before placing it in the microwave. --Stand it on the toothpicks and it will cook more evenly.
  • If you just need a few drops of lemon juice, prick a fresh lemon with a fork and squeeze out the juice you need. Seal the skin with butter and return the lemon to the refrigerator.
  • To brown chicken in the microwave, coat it with butter (not margarine — it’s the milk solids in butter that brown), then soy sauce, and paprika.

A Healthy Breakfast Recipe - Broken Wheat Upma

 Periyar Rice Broken Wheat


Broken Wheat Upma, as the name suggests is a nutrient-rich wheat based
upma. While the broken wheat brings in loads of dietary fibre and
energy, carrot and green peas bring along a wealth of nutrients,
especially vitamin A. The veggies also add crunch to an otherwise soft
upma. You may also add other veggies of your choice to make it more
colourful and tasty.
  • Clean and wash the Periyar broken wheat thoroughly. Par-boil the broken wheat in 2 cups of hot water for 3 to 4 minutes. Drain and keep aside.
  • Heat the oil in a pressure cooker, and add the mustard seeds.
  • When the seeds crackle, add the green chillies and sauté on a medium flame for a few seconds.
  • Add the onions and ginger, mix well and sauté on a medium flame for 1 to 2 minutes.
  • Add the green peas and carrots, mix well and sauté on a medium flame for 1 to 2 minutes.
  • Add the broken wheat, salt and 1¼ cups of water, mix well and pressure cook for 2 whistles.
  • Allow the steam to escape before opening the lid.
  • Garnish with coriander and keep aside to cool slightly.

“THALASSERY RICE PATHIRI “ THE TASTE OF BREAKFAST!


 THALASSERY RICE PATHIRI


INGREDIENTS

Rice Powder (roasted) or pathiri powder - 2 cups
Water - 2 cups
Salt to taste

PREPARATION METHOD


  • Heat a bowl and add water with salt. When it boils slowly add the rice powder to it mix well and switch off the flame.
  • Slowly add required water and add salt to make the mixture.
  • Change the contents to a bowl and press it well to make the dough. You have to press it very well at least for 10 minutes. Well pressed dough makes soft pathiri.
  • Make balls from it and roll it as we do for chapathies. You can use the rice powder while rolling the pathiri.
  • Heat the pan on medium fire, when it is hot place the pathiri on it. When steam comes turn the pathiri to other side. Remember it will take only few seconds so do not wait for long.
  • Then turn again, soon you can see the pathiri puffs up.
  • Remove the pathiri from the pan. Though we cook on medium heat pathiri should not get color change or brown spots.
  • When pathiri is done, dip it in coconut milk.
  • The tasty Pathiri is ready. You can serve it with any non veg curry.
